Not only did writer Ann Maloney highlight our revolutionary dry aged fish, but she also covered Chef Michael’s ground-breaking innovations in seafood utilization to create inventively delicious dishes like Sliders, Pasta Bolognese, Muffalettas and more – all using Swordfish instead of meat.
